Indian cuisine, combining simple cooking styles with natural food, has a long history in the world. In the past, it was, however, not common to have Indian recipes in the black and white. They were used to be memorized and handed down from generation to generation.

The staples of Indian cuisine are Bajra, rice and atta. In Indian dishes, masala is very important and commonly found. Masala is the name for exquisite spicy mixtures crushed on the millstone.

India is a giant country. Although Indian cooking follows the basic principles, there are regional variations reflecting the varied demographics of the ethnically-diverse subcontinent.

The north Indians enjoy very rich and heavy food while the south Indians love light and healthy food. Meat, butter, cream and bread are common on the north Indians' table. Punjab located in northwestern India, for example, is famous for its "tandoori" dishes which charcoal wood oven is often used to roast meat and bake bread. In south Indian cuisine, it is easy to find a lot of vegetables, seafood and mustard seeds. One of the famous dishes from Andhra Pradesh located in south India is pappu which is mainly made of pigeon pea.

My intention of the website is to share the enjoyment from the Indian cuisine. The recipes here are a true representation of the life style and richness of our Indian culture.
