Balti Butter Chicken

Ingredients :

1kg chicken breast, 2 onions (medium), 30g coriander, 14g ginger, 2 cloves of garlic, 18g bay leaves, 2 cups of canned tomatoes, 1.25t salt, 6T butter, 1T corn oil, 4T light cream.

(1) some chicken bouillon powder, some ground white pepper.
(2) 150ml plain yoghurt, 1/2 cup of ground almonds, 1.5t chili powder, 1/4t ground cloves, 1/4t ground cinnamon, 1t garam masala, 4 green cardamom pods.

Preparation :

1. Rinse chicken breast; Discard the skin; Cut into pieces; Marinate in seasoning (1) for 30 minutes.
2. Peel, rinse and mince garlic.
3. Peel, rinse and mince ginger.
4. Crush bay leaves; Transfer to a big mixing bowl.
5. Add seasoning (2), the ginger and the garlic to the mixing bowl from the step 4; Mix well.
6. Chop 2 cups of canned tomatoes; Add to the mixing bowl from the step 5; Mix well; Add the chicken from the step 1 to the mixing bowl; Mix well so that the chicken is evenly coated with the marinade; Cover with cling film; Chill in the fridge for 180 minutes.
7. Rinse coriander; Chop most.
8. Peel, rinse and slice onions.
9. Heat a heavy-based pan over a high heat; Turn to a low heat; Add 6T butter and 1T corn oil; Cook over a low heat till melted; Add the onions; Stir-fry over a low heat for 3 minutes; Add the chicken mixture from the step 6; Stir-fry over medium heat for 10 minutes; Add the chopped coriander; Toss over a low heat briefly; Add 4T light cream; Stir-fry over a low heat till mixed; Turn off the heat; Arrange on a serving plate; Garnish with the remaining coriander.
