Balti Chicken In Thick Creamy Coconut Sauce

Ingredients :

260g chicken, 3 cloves of garlic, 14g ginger, 1 dried red chili pepper, 30g coriander, 1T oil.

SEASONINGS:
(1) some chicken bouillon powder, some ground black pepper.
(2) 1T ground almonds, 1T desiccated coconut.
(3) 1/3 cup of coconut milk, 2/3 cup of ricotta cheese, 1.5t ground coriander seeds, 1t chili powder, 1t salt.
(4) 3 green cardamom pods, 1 bay leaf.

Preparation :

1. Rinse chicken; Discard the skin and bones; Cut into pieces; Marinate in seasoning (1) for 45 minutes.
2. Peel, rinse and mince garlic.
3. Peel, rinse and mince ginger.
4. Rinse and chop coriander finely.
5. Crush dried red chili pepper.
6. Heat a dry heavy-based pan over a high heat; Stir-fry seasoning (2) till they turn just a shade darker; Turn off the heat; Transfer to a big mixing bowl.
7. Add seasoning (3) to the mixing bowl from the step 6; Mix well.
8. Heat a pan with 1T oil over a high heat; Stir-fry seasoning (4) over a low heat till fragrant; Add the chicken from the step 1; Stir-fry over a low heat for 2 minutes; Add the mixture from the step 7; Mix well; Turn to a lower heat; Add the coriander and the crushed dried red chili pepper; Stir-fry briefly; Cover the pan with a lid; Cook over a low heat for 12 minutes; Remove the lid; Cook over a low heat for 2 more minutes; Ready to serve.
