Balti Chicken Vindaloo

Ingredients :

1 potato (medium), 2 onions (medium), 4 cloves of garlic, 12g ginger, 30g fenugreek, 2t coriander seeds, 1.5t cumin seeds, 1T oil , 4 curry leaves, 2 green chili peppers.

SEASONINGS:
150ml malt vinegar, 1.5t chili powder, 1/4t turmeric powder, 1t salt, 1.5t paprika, 1T tomato puree, 1.25 cups of chicken stock.

Preparation :

1. Peel, rinse and mince garlic.
2. Peel, rinse and mince ginger.
3. Rinse and ground fenugreek.
4. Rinse and cube chicken breast.
5. Crush 2t coriander seeds.
6. Crush 1.5t cumin seeds.
7. Add seasoning (1), the coriander seeds, the cumin seeds, the garlic, the ginger and the fenugreek to a big mixing bowl; Mix well; Add the chicken; Mix well; Cover with cling film; Leave it for 90 minutes.
8. Rinse, seed and chop green chili peppers.
9. Peel, rinse and slice onions.
10. Heat a pan with 1T oil over a high heat; Stir-fry the onions and curry leaves over a low heat for 4 minutes; Lower the heat slightly; Add the chicken mixture; Stir-fry over a low heat for 2 minutes; Add the potato; Cover the pan with a lid; Cook over a medium heat for 7 minutes; Ready to serve.
