Balti Chicken With Green And Red Chili Peppers

Ingredients :

290g chicken breast, 2 red chili peppers, 3 green chili peppers, 3 onions (medium), 4 cloves of garlic, 18g ginger, 26g coriander, 1T lemon juice, 2T oil, 1 lemon, 1.5 cups of chicken stock.

SEASONINGS:
(1) some chicken bouillon powder, some ground black pepper, some ground white pepper, some lemon juice.
(2) 1t chili powder, 6 curry leaves, 1t salt, 1.5t ground coriander seeds.

Preparation :

1. Rinse chicken; Discard the skin; Shred; Marinate in seasoning (1) for 80 minutes.
2. Peel, rinse and slice onions.
3. Rinse coriander; Chop most; Discard the stems of the remaining.
4. Peel, rinse and mince ginger.
5. Peel, rinse and mince garlic.
6. Rinse red chili peppers; Cut into halves lengthwise; Seed; Julienne.
7. Rinse green chili peppers; Cut into halves lengthwise; Seed; Julienne.
8. Add 1.5 cups of chicken stock to a heavy-based pan; Bring to the boil over a high heat; Add the chicken from the step 1; Bring to the boil over a high heat again; Cook over a low heat for 10 minutes; Turn off the heat; Remove.
9. Rinse a lemon; Cut into wedges.
10. Heat a pan with 2T oil over a high heat; Turn to a low heat; Stir-fry the onions over a low heat till golden brown; Add seasoning (2), the ginger and the garlic; Stir-fry over a low heat till fragrant; Add the chicken; Stir-fry over a medium heat for 5 minutes; Add 1T lemon juice, the chopped coriander and the peppers; Stir-fry over a high heat for 5 minutes; Turn off the heat; Arrange on a serving plate; Garnish with the remaining coriander; Serve with the lemon wedges.
