Balti Chicken With Leeks

Ingredients :

480g chicken breasts, 2 tomatoes (medium), 2 medium leeks, 1/2 cup of yellow split peas, 30g coriander, 4T corn oil.

(1) some chicken bouillon powder, some ground black pepper.
(2) 6 dried red chili peppers (large), 4 curry leaves, 1t mustard seeds.
(3) 2t mango powder, 1/2t chili powder, 1t ground coriander seeds, 1t salt.

Preparation :

1. Soak 1/2 cup of yellow split peas in water for 3 hours; Remove; Discard the stones if any; Rinse; Drain; Arrange to a pan; Pour water into the pan (just enough to cover the peas); Bring to the boil over a high heat for 10 minutes; Drain.
2. Rinse chicken; Discard the skin; Cut into pieces; Marinate in seasoning (1) for 45 minutes.
4. Rinse and chop coriander.
5. Peel, rinse and chop tomatoes.
6. Rinse leeks; Slice thinly into rounds with a sharp knife; Separate the slices; Rinse in a colander under cold water; Drain.
7. Heat a pan with 4T corn oil over a high heat; Turn to a low heat; Add seasoning (2) and the leeks; Stir-fry over a low heat for 6 minutes; Add seasoning (3), the chicken from the step 2 and the tomatoes; Stir-fry over a medium heat for 10 minutes; Add the yellow split peas from the step 1; Stir-fry over a high heat for 2 minutes; Turn off the heat; Arrange on a serving plate; Garnish with the coriander.
