Ingredients :

480g chicken breast, 4 cloves of garlic, 2 onions (medium), 5 green chili peppers, 2 carrots, 2 potatoes (medium), 1 zucchini, 30g coriander, 3 limes, 4T corn oil, 1t salt.

some chicken bullion powder, some ground white pepper.

Preparation :

1. Discard the skin of chicken breast; Trim off the fat; Cut into strips; Marinate in seasonings for 30 minutes.
2. Peel, rinse and slice garlic.
3. Peel, rinse and cut carrots into strips.
4. Peel, rinse and slice onions.
5. Rinse and seed green chili peppers; Chop most; Cut the remaining into strips.
6. Rinse and chop coriander.
7. Peel, rinse and cut potatoes into strips.
8. Peel, rinse and cut a zucchini into strips.
9. Rinse limes; Cut into halves; Cut 3 slices from an half; Juice the remaining.
10. Heat a pan with 4T corn oil over a high heat; Turn to a low heat; Add the onion and an half of the garlic; Stir-fry over a low heat till the onion is slightly brown; Add the chicken and 1t salt; Stir-fry over a low heat till the chicken is slightly brown and all the moisture has evaporated; Add 2T lime juice, the chopped green chili peppers, the carrots, the potatoes, the zucchini and the fresh coriander; stir-fry over a low to medium heat for 10 minutes; Turn off the heat; Arrange on a serving plate; Garnish with the lime slices and the green chili pepper strips.
