Balti Chili Chicken

Ingredients :

680g chicken breast, 8 green chili peppers (large), 12g ginger, 3 cloves of garlic, 2 onions (medium), 30g mint leaves, 30g coriander, 10 cherry tomatoes, 5T corn oil, 1T lemon juice.

(1) some lemon juice, some ground black pepper, some chicken bouillon powder.
(2) 1/4t onion seeds, 1/4t cumin seeds, 4 curry leaves, 1t chili powder, 1t ground coriander, 1t salt.

Preparation :

1. Discard the skin of chicken breast; Rinse; Cube; Marinate in seasoning (1) for 30 minutes.
2. Rinse and slit green chili peppers.
3. Peel, rinse and mince ginger.
4. Peel, rinse and mince garlic.
5. Rinse and chop mint leaves.
6. Rinse coriander; Chop most; Discard the stems of the remaining.
7. Peel, rinse and chop onions.
8. Rinse cherry tomatoes.
9. Heat a pan with 5T corn oil over a high heat; Stir-fry green chili peppers over a low heat till the color of the skin starts changing; Add seasoning (2), the ginger, the garlic and the onion; Stir-fry over a low heat for a few seconds; Add the chicken; Stir-fry over a medium heat till the chicken is cooked; Drizzle with 1T lemon juice; Add the mint and coriander; Stir-fry over a low heat till mixed; Add the cherry tomatoes; Toss briefly; Ready to serve.
