1 Arrange 300g brown rice flour on a dry cloth; Arrange in a steamer; Steam over a high heat for 10 minutes; Turn off the heat; Cool; Strain thorough a sieve to a mixing bowl 2 Dissolve 1.


Chicken Pilau

Ingredients :

300g uncooked basmatic rice, 500g chicken breast, 6 cloves of garlic, 2 onions, 3 stalks of coriander, 2T ghee, 8g ginger, 40g mint leaves, 4 green chili peppers, 3 cloves.

SEASONINGS:
(1) 1.5t salt, 2.5 cups of water.
(2) 2t cumin seeds, 1T coriander seeds, 1/4t black peppercorns,1/2T turmeric powder, 1/2 cup of yogurt.
(3) 1 cinnamon stick, 2 cardamon pods, 2 bay leaves.

Preparation :

1. Rinse uncooked basmati rice in a couple of changes of water; Soak in water for 30 minutes; Drain.
2. Rinse and cut chicken breast into pieces.
3. Peel and rinse garlic.
4. Peel, rinse and dice onions.
5. Rinse and chop coriander finely.
6. Peel, rinse and slice ginger.
7. Rinse and seed green chili peppers.
8. Add seasoning (2), the sliced ginger, the seeded green chili peppers, an half of the peeled garlic and most of the mint leaves to an electronic blender, and blend into smooth paste.
9. Heat a pan with 2T ghee over a medium heat; Stir-fry seasoning (3) and the remaining garlic over a low heat till fragrant; Add the onions; Stir-fry over a low heat till transparent; Add the smooth paste from the step 8; Stir-fry over a low heat for 1 minute; Add the chicken; Stir-fry over a low heat till the color changed (about 3 minutes); Add the rice and seasoning (1); Bring to the boil over a high heat; Turn to a low heat; Add the coriander; Cover the pan with a lid; Cook over a low heat till done (about 18 minutes); Garnish with the remaining mint leaves; Read to serve.

COOKING TIPS:
It is advisable to substitute 2.5 cups of chicken stock for 2.5 cups of water.
