1 Rinse lamb; Trim off the fat; Cut into pieces; Marinate in seasoning (1) for 45 minutes; Add seasoning (2) and mix well; Cover tightly; Chill for 60 minutes; Remove and drain; Reserve the yoghurt f.


Chicken With Green Mango

Ingredients :

480g chicken breast, 1 green mango, 16g ginger, 3 cloves of garlic, 2 onions, 2 tomatoes, 2 green chili peppers, 1 stalk of coriander, 2T oil, 4 sprigs of curry leaves, 1.25 cup of chicken stock.

SEASONINGS:
(1) some chicken bouillon powder, some ground pepper.
(2) 1/4t onion seeds, 1t chili powder, 1/4t ground turmeric, 1t salt, 1t ground coriander.

Preparation :

1. Thaw chicken breast; Rinse; Blanch in boiling water for 15 seconds; Remove and immediately rinse in running water till cool; Drain; Discard the skin; Cut into cubes; Marinate in seasoning (1) for 30 minutes.
2. Peel, rinse and mince ginger.
3. Peel, rinse and mince garlic.
4. Rinse, seed and chop green chili peppers finely.
5. Rinse and chop coriander finely.
6. Peel, rinse and slice onions.
7. Rinse and quarter tomatoes.
8. Peel and slice a green mango; Discard the stone; Place in a bowl and cover.
9. Add seasoning (2), the ginger and the garlic to a mixing bowl; Mix well; Evenly coat the chicken from the step 1 with the mixture; Add half of the mango slices.
10. Heat a heavy-based pan over a high heat; Add 2T oil and heat over a high heat; Turn to a low heat; Add the onions; Stir-fry over a low heat till golden brown; Add curry leaves; Stir-fry over a low heat slightly; Gradually add the chicken pieces with mango slices; Stir-fry over the low heat briefly; Add 1.25 cups of chicken stock; Cook over a low heat till the chicken is cooked (about 14 minutes; stir occasionally) Add the remaining mango slices, the tomatoes, the green chili peppers and the coriander; Stir-fry over a high heat for 2 minutes; Ready to serve.
