1 Discard heads and tails of prawns; Shell; Devein with toothpicks; Rinse and soak in salty water briefly; Remove and pat dry; Marinate in seasoning (1) for 20 minutes 2 Peel, rinse and mince garl.


Pepper Chicken

Ingredients :

700g chicken breast, 2T oil, 1t mustard seeds, 3 dried red chili peppers, 2t fennel seeds, 3 onions, 2 ripe tomatoes, 20g ginger, 8 cloves of garlic, 1t turmeric powder, 1T black pepper corns, 1t cumin powder, 1t salt, some coriander.

SEASONINGS:
1t ground white pepper.

Preparation :

1. Thaw chicken breasts;
Blanch in boiling water for 10 seconds; Remove and immediately rinse in running water till cool; Drain; Discard the skin; Cut into pieces; Rub with seasonings; Leave them for 60 minutes.
2. Grind fennel seeds.
3. Peel, rinse and dice onions.
4. Peel, rinse and mince ginger.
5. Peel, rinse and chop garlic.
6. Slightly grind 1T black pepper corns in a motor.
7. Break dried red chili peppers into pieces.
8. Rinse and dice tomatoes.
9. Heat a wok over a high heat; Add 2T oil and heat over a medium heat; Stir-fry 1t mustard seeds till they stop spluttering; Add the dried red chili peppers and the ground fennel seeds; Stir-fry over a medium heat till fragrant; Add the onions; Stir-fry over a low heat for 2 minutes; Add the tomatoes; Stir-fry over a high heat till soft; Add all the remaining ingredients; Stir well; Turn to a low heat; Cover with a lid; Cook over a low heat till the chicken is tender and the gravy has thickened; Turn off the heat; Arrange on a serving plate; Garnish with some coriander; Ready to serve.
