Tandoori Chicken

Ingredients :

500g chicken breast, 6 cloves of garlic, 23g ginger, 6 lemons, 120g mint, 5 green chili peppers, some coriander.

(1) 250ml yogurt, 2t garam masala, 1t salt, 1t meat chili powder, 1t ground cumin, 1T ghee.
(2) 125ml yogurt, 1t salt, 1t sugar.

Preparation :

1. Peel, rinse and mince garlic.
2. Peel, rinse and mine ginger.
3. Cut lemons into halves;
4. Add seasoning (1) to a big bowl and mix well; Add the minced garlic, minced ginger and 3T lemon juice from the step 3; Mix well to be the marinade.
5. Thaw chicken breasts; Cut into pieces; Blanch in boiling water for 10 seconds; Remove and immediately rinse in running water till cool; Discard the skin; Rub the chicken pieces with the marinade from the step 4; Keep the chicken pieces in the marinade in the fridge overnight.
6. Rinse mint.
7. Rinse and seed green chili peppers.
8. Preheat an over to 200 degree celsius.
9. Rinse coriander; Drain.
10. Add the mint, the green chili peppers, 3T lemon juice from the step 3 and seasoning (2) to an electronic blender; Blend till smooth to be mint chutney; Pour into a serving bowl and garnish with some coriander.
11. Remove the chicken pieces from the fridge and arrange in baking pan with aluminum foil; Put the baking pan into the oven and bake till cooked (about 30 minutes; Turning and basting with the marinade while baking); Remove; Arrange on a serving plate with the mint chutney on the side; Ready to serve.
