Dry Masala Sauce

Ingredients :

1000g onion, 1000g tomato, 56g ginger, 56g garlic, 100g , some .

SEASONINGS:
(1) 10 bay leaves, 10 cardamon pods, 10 5-cm-long sticks, 5 cloves.
(2) 30g cumin powder, 30g coriander powder, 30g celery powder, 20g turmeric powder, some garam masala, salt.

Preparation :

1. Peel, rinse and mince ginger.
2. Peel, rinse and mince garlic.
3. Peel, rinse and chop onions finely.
4. Rinse and chop tomatoes.
5. Discard the stems of coriander; Rinse; Chop.
6. Heat a skillet over a high heat; Add 100g oil and heat over a high heat; Turn to a low heat; Stir-fry seasoning (1) over a low heat till cracked; Add the ginger and the garlic; Stir-fry over a low heat till fragrant; Add the onions; Stir-fry over a low heat till golden brown; Add the tomatoes; Stir-fry over a medium heat for 10 minutes; Add seasoning (2); Stir-fry over a medium heat for 10 minutes; Turn off the heat; Arrange in a serving plate; Garnish with the coriander.
Ready to serve.
