1 Rinse coriander; Chop most finely; Discard the stem of the remaining 2 Peel, rinse and dice onions.


Fresh Coconut Chutney

Ingredients :

230g coconut flesh, 4 green chili peppers, 28g coriander, 30g mint leaves, 3 limes, 2T peanut oil, 1t nigella seeds (also known as fennel flowers), 1 onion.

SEASONINGS:
1/2t salt, 1/2t caster sugar, 1T coconut milk.

Preparation :

1. Grate coconut flesh.
2. Rinse, seed and chop green chili peppers.
3. Rinse and chop coriander.
4. Rinse and chop mint.
5. Peel, rinse and chop an onion finely.
6. Rinse limes; Cut into halves; Juice.
7. Add the coconut, the green chili peppers, the coriander and the mint to the food processor; Add the half of the lime juice; Grind; Remove to a bowl; Add seasonings; Mix well.
8. Heat a pan over a high heat; Add 2T peanut oil; Heat over a high heat; Turn to a low heat; Stir-fry 1t nigella seeds over a low heat till pop; Add the onion; Stir-fry over a low heat till the onion is soft; Turn off the heat; Add the onion mixture to the coconut mixture from the step 7; Mix well; Cool; Ready to serve.
