Fresh Coriander Relish

Ingredients :

300g coriander, 4T mint sauce, 3 lemons, 3 green chili peppers, 2T vegetable oil, 1.25 cups of desiccated coconut, 2t sugar, some salt.

1/4t cumin seeds, 1/4t fennel seeds, 1/4t onion seeds, 1/4t asafoetida, 4 sprigs of curry leaves, 1 dried red chili pepper.

Preparation :

1. Rinse and chop coriander.
2. Rinse, seed and chop green chili peppers.
3. Granulate 2t sugar.
4. Heat a pan over a high heat; Add 2T vegetable oil; Heat over a low heat; Add seasonings: Stir-fry over a low heat till crackled; Add 1.25 cups of desiccated coconut, the sugar and some salt; Stir-fry over a low heat till the coconut has become golden brown; Turn off the heat; Tip into a bowl; Cool.
