Fried Sesame Seed Chutney

Ingredients :

180g sesame seeds, 1 red , 2 green , 2 stalks of , 18g mint leaves, 1t , 1/4t onion seeds, 4 sprigs of curry leaves.

1t salt, 2/3 cup of water, 30g sugar, 1T tamarind paste.

Preparation :

1. Rinse green chili peppers; Seed and dice one; Slice the remaining.
2. Rinse, seed and slice a red chili pepper.
3. Rinse and chop coriander finely.
4. Rinse and chop mint leaves finely.
5. Heat a dry skillet over a high heat; Add 180g sesame seeds; Stir-fry over a low heat till brown; Turn off the heat; Cool; Grind to a grainy powder.
6. Transfer the sesame powder from the step 5 to a bowl; Add seasonings; Mix well; Add the green chili peppers and the coriander; Mix well with a fork.
7. Heat a heavy-based pan over a high heat; Add 1t oil; Heat over a high heat; Add 1/4t onion seeds and curry leaves; Stir-fry over a low heat till fragrant; Add the mixture from the step 5; Stir-fry over a medium heat for 45 seconds; Turn off the heat; Cool; Arrange on a serving plate; Garnish with the red chili pepper and the remaining green chili pepper. Ready to serve.
