Green Chili Pickle

Ingredients :

480g green chili peppers, 4T yellow mustard seeds , 4T cumin seeds, 48 cloves of garlic, 2/3 cup of oil.

1/3 cup of sugar, 1/4 cup of turmeric powder, 2/3 cup of white vinegar, 2t salt.

Preparation :

1. Peel, rinse and drain garlic; Mince half of the garlic; Keep the remaining whole.
2. Crush 4T yellow mustard seeds.
3. Grind 4T cumin seeds.
4. Add the crushed yellow mustard seeds, the ground cumin seeds, the minced garlic, and seasonings to a sterilized glass bowl; Mix well; Cover with a cloth; Leave it for 24 hours.
5. Rinse green chili peppers; Drain.
6. Heat a pan over a high heat; Add 2/3 cup of mustard oil; Heat over a medium heat; Add the mixture from the step 4; Stir-fry over a medium heat for 5 minutes; Add the garlic cloves; Stir-fry over a low heat for 5 minutes; Add the green chili peppers; Stir-fry over a low heat till tender but green (about 30 minutes); Turn off the heat; Cool; Arrange in a sterilized jar; Leave it for 7 days before serving.
