1 Add 15L milk to a saucepan; Bring to the boil over a high heat (keep on stirring); Turn off the heat; Add seasoning (1); Keep on stirring till the milk begins to curdle 2.


Hot Lime Pickle

Ingredients :

26 limes, 1 cup of salt, 2.5 cups of oil.

SEASONINGS:
(1) 1/2 cup of fenugreek , 1/2 cup of mustard powder, 1/2 cup of chili powder, 2T turmeric powder.
(2) 1t asafoetida, 2T yellow mustard seeds.

Preparation :

1. Rinse limes; Drain; Cut each into 8 pieces; Seed; Arrange in a sterilized jar; Add 1 cup of salt; Mix well; Cover with a lid; Leave it in the warm place for 14 days.
2. Crush 2T yellow mustard seeds.
3. Add seasoning (1) to a bowl; Mix well; Add to the jar with the limes; Mix well; Cover with the lid; Leave it in the warm place for 3 more days.
4. Heat a pan over a high heat; Add 2.5 cups of mustard oil; Heat over a medium heat; Add seasoning (2); Stir-fry over a low heat for 6 minutes; Turn off the heat; Immediately pour over the lime mixture; Mix well; Cover the jar with a clean cloth; Leave in the warm place for 7 days before serving.
