1 Thaw frozen fish fillet; Rinse in running water for 5 minutes; Pat dry; Marinate in seasoning (1) for 45 minutes 2 Peel, rinse and mince garlic.


Makhani Sauce

Ingredients :

1000g tomatoes, 100g onions, 54g garlic, 54g ginger, 50g red chili peppers, 50g honey, 100g ghee, 100g thick cream, 100ml water.

SEASONINGS:
(1) 10g chili powder, 50g cashew nuts.
(2) 10g ground fenugreek leaf, 10g garam masala, some salt.

Preparation :

1. Peel, rinse and chop garlic finely.
2. Peel, rinse and chop ginger finely.
3. Rinse, seed and chop red chili peppers.
4. Peel, rinse and chop onions.
5. Rinse and chop tomatoes.
6. Heat a skillet over a high heat; Add 100g ghee and heat over a low heat; Stir-fry the garlic and the ginger over a low heat till fragrant; Add the onions; Stir-fry over a low heat till slightly brown; Add the red chili peppers; Stir-fry over a low heat till slightly brown; Add the tomatoes and seasoning (1); Cook over a medium heat for 10 minutes; Gradually stir in 100ml water; Bring to the boil over a high heat; Turn off the heat; Cool; Transfer to a blender; Blend for smooth paste.
7. Transfer the smooth paste from the step 6 to a heavy-based pan; Bring to the boil over a high heat; Add seasoning (2); Stir well; Turn off the heat; Immediately stir in 50ml honey; Transfer to a serving plate; Garnish with 100g thick cream. Ready to serve.
