1 Thaw chicken; Blanch in boiling water for 20 seconds; Remove and immediately rinse in running water till cool; Drain; Discard the skin and bones; Cut into pieces; Marinate in seasoning (1) for 15 m.


Mango Chutney

Ingredients :

480g unripe mangoes, 13g ginger, 3 cloves of garlic, 4 dried red chili peppers, 175g , 1t cumin seeds, 4T malt .

SEASONINGS:
1/2t onion seeds, 6 cloves, 6 pepper corns, some salt.

Preparation :

1. Crush 4 dried red chili peppers.
2. Heat a dry pan over a high heat; Turn to a low heat; Add 1t cumin seeds; Stir-fry over a low heat till golden brown; Turn off the heat.
3. Granulate 175g sugar.
4. Peel, rinse and mince garlic.
5. Peel, rinse and thinly slice ginger.
6. Peel and cube mangoes.
7. Heat a pan over a low heat; Add 4T malt vinegar, the dried red chili peppers, the cumin seeds, the sugar and seasonings; Simmer till the spices infuse the vinegar (about 15 minutes); Add the mangoes, the ginger and the garlic; Simmer over a low heat till the mango is mushy; Turn off the heat; Cool; Arrange in a sterilized bottle; Cover and leave for a few days before serving.

Mango chutney and cheese sandwich is winning combination.
