1 Cut dried red chili peppers into 3-cm long pieces 2 Rinse, seed and slice green chili peppers.


Onion Mango And Peanut Chaat

Ingredients :

100g unsalted peanuts, 1 onion, 1 cucumber, 1 mango, 1 green chili peppers, 30g coriander, 20g mint leaves, 2 limes, 1t muscovado, 2t cumin seeds, some salt, 1T peanut oil.

SEASONINGS:
1t mango powder, 1/2t garam masala, some ground asafoetida, 1/2t salt, 1/2t cayenne pepper, 1/2t ground black pepper.

Preparation :

1. Heat a dry pan over a high heat; Stir-fry 2t cumin seeds over a low heat till fragrant; Turn off the heat; Grind.
2. Add seasonings and the cumin seeds; Grind to be chaat masala.
3. Peel, rinse and chop an onion.
4. Rinse, seed and dice a cucumber; Marinate in some salt for 15 minutes; Drain.
5. Rinse, seed and chop a green chili pepper.
6. Rinse and chop coriander finely.
7. Rinse and chop mint finely.
8. Peel, stone and dice a mango.
9. Rinse limes; Cut into halves; Juice.
10. Heat a pan over a high heat; Add 1T peanut oil; Heat over a high heat; Stir-fry 100g peanuts over a low heat till golden brown; Turn off the heat; Remove and drain; Cool.
11. Add the onion, the cucumber, the mango, the green chili pepper, the coriander and the mint to a bowl; Mix; Add 1t chaat masala; Mix; Add the peanuts; Mix; Add the lime juice and some muscovado; Mix well; Cover; Leave it for 30 minutes for the flavors to mature.
12. Arrange the mixture to a serving plate; Sprinkle with the remaining chaat masala; Ready to serve.
