Spicy Tomato Chutney

Ingredients :

800g canned tomatoes, 6 cloves of garlic, 13g ginger, 1t , 6T .

(1) 5-cm-long cinnamon stick, 4 cloves, 1t roasted cumin seeds, 1t nigella seeds (also known as fennel flower / Roman coriander), 4 bay leaves.
(2) 1t chili powder, 1t , 4T .

Preparation :

1. Peel, rinse and mince ginger.
2. Peel, rinse and mince garlic.
3. Crush mustard seeds.
4. Drain canned tomatoes; Chop; Reserve the juice for later use.
5. Heat a pan over a high heat; Add 6T oil and heat over a medium heat; Add seasoning (1) and the mustard seeds; Stir-fry over a low heat for 5 minutes; Add the garlic; Stir-fry over a medium heat till golden; Add the ginger, the tomato juice and seasoning (2); Cook over a low heat till the sauce has reduced; Add the canned tomatoes; Cook over a low heat for 20 minutes; Turn off the heat; Arrange on a serving plate; Cool and serve.
