Sweet And Sour Pineapple

Ingredients :

800g canned rings, 20g , 2 dried red , 1/3 cup of raisins, 1/2 cup of sugar, 1T , 1/2t black mustard , 1/2t cumin seeds, 1/2t onion seeds, 1.5t salt.

Preparation :

1. Peel, rinse and mince ginger.
2. Granulate 1/2 cup of sugar.
3. Crush dried red chili peppers.
4. Drain canned pineapple in a colander; Reserve the juice for later use; Dice the pineapple rings.
5. Heat a heavy-based pan; Add 1T vegetable oil; Heat over a medium heat; Add 1/2t black mustard seeds; Stir-fry over a medium heat till pop; Add 1/2t cumin seeds and onion seeds; Stir-fry over a medium heat briefly; Add the ginger and the dried red chili peppers; Stir-fry over a medium heat till fragrant; Add the pineapple, 1/3 cup of raisins, the sugar and 1.5t salt; Stir-fry over a medium heat briefly; Add 1.25 cups of the pineapple juice; Bring to the boil over a high heat; Turn to a medium heat; Cook over a medium heat for 25 minutes; Ready to serve.
