1 Heat a dry wok over a high heat; Turn to a low heat; Stir-fry seasoning (1) over a low heat for 10 minutes; Turn off the heat; Cool; Sift into a mixing bowl; Remove any lumps 2 Add seasoning .


Tomato And Onion Chutney

Ingredients :

9 tomatoes, 2 onions, 8g ginger, 1 green chili pepper, 2t yoghurt, some mint leaves.

SEASONINGS:
1t garam masala, 3T brown , 175ml malt , 1t salt, 1.5T clear honey.

Preparation :

1. Rinse and slice a green chili pepper.
2. Peel, rinse and chop onions.
3. Peel, rinse and mince ginger.
4. Rinse and cut tomatoes into quarters.
5. Heat a heavy-based pan over a medium heat; Add the tomatoes, the onions, the ginger and seasonings; Toss briefly; Half-cover the pan with a lid; Cook over a low heat for 20 minutes; Mash part of the tomatoes with a fork; Cook over a low-medium heat till thickened; Turn off the heat; Cool; Transfer to a serving bowl; Garnish with the plain low fat yoghurt, the sliced green chili pepper and the mint leaves; Cover and chill in the fridge before serving.
