1 Put each crab on the counter with its back facing down; Insert a knife through its abdomen and hold it till the crab has stopped moving; Remove the reeds/strings; Separate the carapace from its bod.


Banana Coconut Layer Cake

Ingredients :

7 bananas (medium size), 1 cup of grated coconut, 4T ghee, some curry leaves.

SEASONINGS:
(1) 125g rice flour.
(2) 1/2t salt, 150g brown sugar, 125ml water.
(3) 1/2t cardamom powder.

Preparation :

1. Heat a dry wok over a high heat; Turn to a low heat; Stir-fry seasoning (1) over a low heat for 10 minutes; Turn off the heat; Cool; Sift into a mixing bowl; Remove any lumps.
2. Add seasoning (2) in a bowl and mix well; Drizzle the mixture on top of the flour; Mix well till the flour resembles fine bread crumbs; Add seasoning (3); Mix well.
3. Peel and thinly slice bananas.
4. Add 1/3 of the flour mixture to a heat-proof casserole dish; Arrange 1/2 of the banana slices on the top of the flour mixture; Top with 1/2 of the grated coconut; Add another layer of the flour mixture; Arrange the remiaining banana slices on the top; Top with the remaining grated coconut; Finish with the final layer of the flour mixture; Drizzle the ghee over the top evenly.
5. Steam the mixture over a medium heat for 30 minutes; Remove; Slice; Garnish with some curry leaves. Serve hot.
