1 Thaw chicken breast; Rinse; Blanch in boiling water for 15 seconds; Remove and immediately rinse in running water till cool; Drain; Discard the skin; Cut into cubes; Marinate in seasoning (1) for 3.


Cardamom Rice Cake

Ingredients :

800g beaten rice flakes, 300g jaggery, 5T sugar, 280 ml water, 20 cardamom pods, 125ml ghee, 3/4t salt, 1/2t ginger powder, some vegetable oil.

Preparation :

1. Heat a dry wok over a high heat; Stir-fry 800g beaten rice flakes over a low heat for 3 minutes; Turn off the heat.
2. Rinse and bruise cardamom pods; Remove the seeds to a grinder and grind finely.
3. Chop jaggery.
4. Add 250ml water to a saucepan; Bring to the boil over a high heat; Add sugar and the chopped jaggery; Cook over a low heat till dissolved; Turn off the heat;
Strain the syrup through a sieve into a mixing bowl; Add the rice flakes from the step 1; Add 125ml ghee, 3/4t salt, ground cardamom seeds and 1/2t ginger powder; Mix well.
5. Heat a greased baking pan over a low heat; Turn off the heat; Press the mixture from the step 4; Set aside; Cut into squares; Ready to serve.
