1 Rinse 500g Basmati rice; Drain 2 Thaw chicken; Blanch in boiling water for 10 seconds; Remove and immediately rinse in running water till cool; Drain; Cut into 10 pieces.


Gulab Jamun

Ingredients :

1L water, 400g sugar, 2T rose water, 60g self-raising flour, 1t baking soda, 300g full cream milk powder, 100ml evaporated milk, 2t ghee, 1.5L vegetable oil.

Preparation :

1. Strain 60g self-raising flour through a sieve to a stainless steel bowl; Add 1t baking soda and 300g full cream milk powder; Mix well; Gradually add the evaporated milk and mix well to be thick batter; Lightly grease hands with ghee; Knead the mixture into soft dough; Divide the dough into balls with 2.5cm diameter each.
2. Add 1L water to a saucepan; Bring to the boil over a high heat; Turn to a low heat; Add 400g sugar; Cook over a low heat till dissolved; Add 2T rose water; Mix well to be the syrup; Turn off the heat.
3. Add 1.5L oil to a saucepan; Bring to the boil over a high heat; Turn to a low heat; Deep-fry the balls from the step 1 till both sides have been golden brown; Turn to a high heat; Deep-fry over a high heat for 10 seconds; Remove with a slotted spoon and drain; Turn off the heat.
4. Gently add the fried balls in the syrup from the step 2; Leave them for 2 hours; Remove to a serving plate; Ready to serve.
