1 Rinse lean lamb; Discard the bones; Trim off the fat; Cube; Marinate in seasoning (1) for 45 minutes 2 Peel and rinse ginger; Shred most; Mince the remaining.


Kesari Kheer

Ingredients :

2L milk, 50g long grain rice, 50ml butter, 56g almonds, 60g pistachio, 1g saffron, some grate cheese.

SEASONINGS:
200g sugar, 5g cardamon powder, 56g raisins.

Preparation :

1. Rinse long grain rice in running water for 4 minutes; Soak in water for 30 minutes; Remove; Rinse; Drain.
2. Blanch almonds in boiling water for 1 minute; Remove and cool; Peel; Slice.
3. Shell pistachios; Blanch pistachios in boiling water for 1 minute; Remove and cool; Peel; Slice.
4. Heat a skillet over a high heat; Add 50ml butter and heat over a low heat; Add the long grain rice; Stir-fry over a low heat for 5 minutes; Turn off the heat.
5. Add 2L milk to a heavy-based sauce pan; Bring to the boil over a low heat; Add 1g saffron; Cook over a low heat for 30 minutes (keep on stirring); Add the long grain rice from the step 4; Cook over a low heat for 50 minutes (keep on stirring); Add seasonings, the almonds and the pistachios; Cook over a low heat till thickened like custard; Turn off the heat; Transfer to a serving plate; Cool; Chill in the fridge for 3 hours; Garnish with some grate cheese; Ready to serve.
