Semolina Pineapple Cake

Ingredients :

250g caster sugar, 750ml water, 125ml ghee, 300g fine semolina flour, 1t cardamom powder, 410g pineapple, 150g pistachio, some vegetable oil.

Preparation :

1. Shell and chop most of the pistachio; Reserve some pistachio with shells for later use.
2. Drain and finely chop most of the pineapple; Cut the remaining into edges.
3. Add 750ml water to a saucepan; Bring to the boil over a high heat; Add 250g caster sugar; Cook over a low heat till thick syrup formed; Turn off the heat; Cool at the room temperature.
4. Heat a saucepan over a high heat; Evenly spread 125ml ghee over the saucepan and cook over a low heat; Add semolina flour and 1t cardamom powder; Stir-fry over a low heat till slightly darker (about 5 minutes); Add the syrup from the step 3;
Stir well; Cover tightly; Simmer till almost all the water has evaporated; Add the chopped pineapple and chopped pistachio; Mix well; Turn off the heat;
5. Heat a greased baking pan over a low heat; Turn off the heat; Press the mixture from the step 4 into the pan; Spread it out evenly; Cool and set; Cut into squares; Garnish with the remaining pistachio and pineapple; Ready to serve.
