1 Peel, rinse and dice onions 2 Rinse, seed and cut a red pepper into wedges.


Stuffed Sweet Idli

Ingredients :

180g parboiled rice, 220g plain rice, 135g white gram, 125ml water, 1/4t salt, 1.5T ghee, 240g grated coconut 6T caster sugar, 2T roasted cashew nuts, 1T roasted sesame seeds, 1T roasted peanuts, 8 cardamoms.

Preparation :

1. Soak 180g parboiled rice, 220g plain rice and 135g white gram in water for 6 hours; Rinse and drain; Add to an electronic blender; Add 125ml water; Blend till smooth; Add 1/4t salt; Stir well; Transfer to a bowl; Cover; Leave it to ferment at room temperature for 10 hours.
2. Chop 2T roasted cashew nuts.
3. Pound 1T roasted sesame seeds.
4. Pound 1T roasted peanuts.
5. Discard the pods of cardamoms;
6. Rinse and bruise cardamom pods; Remove the seeds to a grinder and grind finely.
7. Heat a skillet over a high heat; Add 1T ghee and heat over a medium heat; Add 240g grated coconut; Stir-fry over a medium heat till golden brown; Add the chopped sesame seeds, pounded peanuts and the grounded cardamom; Stir-fry over a medium heat till mixed; Add 6T caster sugar; Mix well; Turn off the heat.
8. Lightly grease idli moulds with some ghee; Spread the batter from the step 1 over the inside moulds; Fill in 3T filling from the step 7; Cover with the batter again.
9. Line idli steaming rack with a wet muslin cloth; Arrange the moulds in the steamer; Cover; Steam over a high heat for 17 minutes; Remove and arrange on a serving plate; Ready to serve.
