1 Cut off the rostrum on the prawns' heads; Trim off the antenna and legs; Shell (keep the last sections and the tails); Devein with toothpicks; Rinse and pat dry; Marinate in seasoning (1) for 20 m.


Sweet Coconut Slices

Ingredients :

125ml evaporated milk, 60ml sweetened condensed milk, 400g sugar, 8 cardamom pods, 500g freshly grated coconut, 1.5T butter, 1/4t salt, 1 drop of green food coloring, some vegetable oil.

Preparation :

1. Heat a vegetable-oil-greased saucepan over a low heat; Add 125ml evaporated milk, 60ml condensed milk and 400g sugar; Stir over a low heat till the sugar is dissolved; Turn off the heat.
2. Rinse and bruise pods; Remove the seeds into a grinder and grind finely; Add to the milk mixture from the step 1 and mix well.
3. Heat the saucepan with the milk mixture from the step 1 over a low heat again; Add grated coconut, 1T butter, 1/4t salt and 1 drop of food coloring; Stir constantly over a very low heat till the mixture is almost dry; Turn off the heat.
4. Firmly press the cooked candy from the step 3 into the butter-lightly-greased baking pan; Cool; Slice before completely hardened; Ready to serve.
