1 Rinse lamb tenderloin; Trim off the fat; Cut into even-sized strips; Marinate in seasoning (1) for 30 minutes 2 Peel, rinse and mince ginger.


Sweet Saffron Rice

Ingredients :

3T ghee, 6-cm-long cinnamon stick, 4 cloves, 250ml milk, some saffron, 220g caster sugar, 375g cooked Basmati rice, 1/2t ground cardamom, 2T shelled nuts, 2T roasted almonds, 2T raisins.

Preparation :

1. Break a cinnamon stick in halves.
2. Slightly toast some saffron; Crush.
3. Chop 2T pistachio nuts.
4. Chop 2T roasted almonds.
5. Heat a pan over a high heat; Add 3T ghee and heat over a medium heat; Add the cinnamon sticks and cloves; Stir-fry over a medium heat till fragrant; Add 250ml milk, the crushed saffron and 220g caster sugar; Stir over a low heat till the sugar dissolves and the saffron has colored the milk (about 3 minutes); Add 375g cooked Basmati rice and 1/2t ground cardamon; Cover with a lid; Simmer over a low heat till the milk has been absorbed by the cooked rice (about 10 minutes); Turn off the heat; Stir in the chopped pistachio nuts, chopped almonds and 2T raisins; Ready to serve.
