Balti Sole Fillet In Spicy Coconut Sauce

Ingredients :

300g sole fillets, 3 cloves of garlic, 1 onion (medium), 2 tomatoes (medium), 2T corn oil, 30g coriander.

(1) some lemon juice, some ground white pepper.
(2) 1t onion seeds, 4 dried red chili peppers.
(3) 2T desiccated coconut, 1t ground coriander seeds, 1t salt.
(4) 2/3 cup of stock, 1T lime juice.

Preparation :

1. Thaw sole fillets; Rinse in running water for 5 minutes; Drain; Discard the skin and bones; Cut into large pieces; Marinate in seasoning (1) for 45 minutes.
2. Peel, rinse and slice garlic.
3. Rinse and chop coriander.
4. Peel, rinse and slice an onion.
5. Rinse and slice tomatoes.
6. Heat a deep pan over a high heat; Add 2T corn oil; Heat over a high heat; Turn to a low heat; Add seasoning (2), the garlic and the onion; Stir-fry over a low heat for 4 minutes; Add seasoning (3) the tomatoes and coriander; Stir-fry over a low heat till mixed; Add the sole from the step 1 (Flip them over gently till evenly coated); Cook over a low heat for 5 minutes; Add seasoning (4); Cook over a low heat till the sauce has evaporated; Ready to serve.
