Chunky Fish Balti With Peppers

Ingredients :

480g frozen haddock fillets, 14g ginger, 1 red bell pepper, 1 green bell pepper, 1 orange bell pepper, 10 cherry tomatoes, 2/3 cup of corn oil.

SEASONINGS:
(1) some lemon juice, some ground white pepper.
(2) 1.5t ground cumin seeds, 2t dried mango powder, 1t ground coriander seeds, 1/2t chili powder, 1t salt, 3T corn starch.

Preparation :

1. Thaw haddock fillets; Rinse in running water for 5 minutes; Drain; Discard the skin and bones; Cut into pieces; Marinate in seasoning (1) for 45 minutes.
2. Peel, rinse and mince ginger.
3. Rinse cherry tomatoes.
4. Rinse, seed and cut a red bell pepper into pieces.
5. Rinse, seed and cut a green bell pepper into pieces.
6. Rinse, seed and cut an orange bell pepper into pieces.
7. Add seasoning (2) and the ginger to a mixing bowl; Mix well; Add the fillet from the step 1; Mix well till evenly coated.
8. Add 2/3 cups of corn oil to a deep pan; Bring to the boil over a high heat; Jiggle the red, green and orange bell peppers in the oil for 2 minutes; Remove and drain.
9. Bring the oil to the boil over a high heat again; Turn to a low heat; Deep-fry the fillet from the step 7 over a low heat till golden brown; Turn to a high heat; Deep-fry over a high heat for 20 seconds; Remove and drain; Turn off the heat.
10. Arrange the fillet, the red bell pepper, the green bell pepper and the orange bell pepper on a serving plate; Garnish with the cherry tomatoes. Ready to serve.
