Cod With Spicy Mushroom Sauce

Ingredients :

4 frozen cod fillets, 3T oil, 1 onion, 16g ginger, 40g string beans, some coriander, 3 cloves of garlic, some salt, 70g button mushrooms.

SEASONINGS:
(1) 4t lemon juice, some salt, some ground black pepper.
(2) 175ml plain low fat yoghurt, 1/2t garam masala, 1/2t chili powder, 1t salt.
(3) 1 bay leaf, 4 black pepper corns.

Preparation :

1. Thaw frozen cod fillets; Rinse in running water for 5 minutes; Pat dry; Discard the skin and bones; Marinate in seasoning (1) for 45 minutes.
2. Peel, rinse and mince garlic.
3. Peel, rinse and mince ginger.
4. Discard most part of the stems of coriander; Rinse and drain.
5. Vein the string beans; Rinse in running water; Drain; Blanch in boiling water with 1T oil and some salt for 4 minutes; Remove and drain.
6. Scrape off the dirt on button mushrooms; Rinse in running water; Drain.
7. Peel, rinse and chop onions.
8. Heat a pan over a high heat; Add 1T oil; Turn to a low heat; Pan-fry each side of the fillet from the step 1 over a low heat for 5 minutes; Remove and drain; Turn off the heat.
9. Add seasoning (2), the ginger and the garlic to a mixing bow; Mix well.
10. Heat a deep pan over a high heat; Add 1T oil; Heat over a high heat; Turn to a low heat; Stir-fry the onion over a low heat for 1 minute; Add seasoning (3); Stir-fry over a low heat for 3 minutes; Add the mushrooms; Stir-fry over a medium heat for 5 minutes; Add the seasoning (2) mixture from the step 9; Stir-fry over a medium heat for 3 minutes; Add the cod fillets from the step 8; Cook over a medium heat for 2 minutes; Turn off the heat; Arrange on a serving plate with the side of the string beans from the step 5; Garnish with the coriander. Ready to serve.
