1 Thaw sole fillets; Rinse in running water for 5 minutes; Drain; Discard the skin and bones; Cut into large pieces; Marinate in seasoning (1) for 45 minutes 2 Peel, rinse and slice garlic.


Curried Fish Steak

Ingredients :

750g white fish steak, 6 cloves of garlic, 8g ginger, 5T oil, 1 onion, 2 green chili peppers, 2 sprigs of curry leaves, 2 ripe tomatoes, 1 stalk of coriander, 1 lime.

SEASONINGS:
(1) 1t turmeric powder, 1t salt.
(2) 1t cumin seeds, 1t fennel seeds.
(3) 125ml yogurt, 2T fish curry powder, 1/2t salt.

Preparation :

1. Peel, rinse and mince garlic.
2. Peel, rinse and mince ginger.
3. Rinse and cut lime into halves; Juice an half; Keep the remaining half for later use.
4. Peel, rinse and slice an onion.
5. Rinse and dice tomatoes.
6. Add the garlic, ginger and seasoning (1) to a large bowl; Mix well.
7. Thaw fish steak; Rub the fish steaks with lime juice; Marinate in the mixture from the step 6 for 45 minutes.
8. Rinse, seed and slice green chili peppers.
9. Discard the stems of coriander; Rinse and drain.
10. Heat a skillet over a high heat; Add 3T oil and heat over a high heat; Pan-fry the coated fish steak over a low heat till both sides have been golden brown and crispy; Remove and drain; Turn off the heat;
11. Heat a wok over a high heat; Add 2T oil and heat over a medium heat; Stir-fry seasoning (2) over a low heat till fragrant; Add the onion, green chili peppers, curry leaves and tomatoes; Stir-fry over a low heat till soft; Add seasoning (3) and the coriander; Mix well; Bring to the boil over a medium heat; Turn to a low heat; Cover with a lid; Simmer over a low heat till the oil has separated; Add the fish steaks and coat the fish in the mixture well; Cover with the lid; Simmer over a low heat till the sauce has thickened; Turn off the heat; Remove to a serving plate; Squeeze the remaining half of the lime over the fish; Ready to serve.
