1 Rinse and drain 300g Basmati rice 2 Break a cinnamon stick into halves.


Curried Fried Fish Fillets

Ingredients :

500g fish fillets, 1 lemon, 3T flour, 3T oil, 3T mustard, 12g ginger, 6 cloves of garlic, 2 onions, 1t black mustard seeds, some coriander.

SEASONINGS:
(1) 3 bay leaves, 5 cardamom pods, 1 cinnamon stick.
(2) 2t chili powder, 2t cumin powder, 1t turmeric powder, 1/4t fenugreek powder, 250ml yogurt.
(3) 2t salt, 1t sugar.

Preparation :

1. Peel, rinse and minced garlic.
2. Peel, rinse and mince ginger.
3. Peel, rinse and dice onions.
4. Coarsely ground black mustard seeds.
5. Rinse and cut a lemon into halves; Juice.
6. Thaw fish fillet; Rub the fish fillet with the lemon juice and some salt; Leave it for 45 minutes; Dredge the fish fillet in flour and shake off the excess flour.
7. Heat a skillet over a high heat; Add 3T oil and heat over a high heat; Turn to a medium heat; Pan-fry the coated fish fillet over a medium heat till both sides have been light brown (about 2 minutes); Remove and drain; Turn off the heat.
8. Discard the stem of coriander; Rinse and drain.
9. Add seasoning (2) to a bowl and mix well; Add the black mustard seeds; Mix well.
10. Heat a wok over a high heat; Add 3T mustard and heat over a medium heat; Stir-fry seasoning (1) over a medium heat till fragrant; Add the ginger, garlic and onion; Stir-fry over a low heat till the onion is light brown; Add the mixture from the step 9; Cook over a low heat till the oil separates from the mixture; Add seasoning (3); Stir well; Add the fried fish fillet; Cover with a lid; Simmer over a low heat for 5 minutes; Turn off the heat; Garnish with the coriander; Ready to serve.
