Monkfish And Okra Curry

Ingredients :

450g monkfish fillet, 230g okra, 1 onion, 3 cloves of garlic, 4 tomatoes, 2/3 cup of stock, 2T oil, 1/4t salt, 1t garam masala.

SEASONINGS:
(1) some lemon juice, some ground black pepper, some white pepper.
(2) 1t turmeric powder, 1/2t chili powder, 1/4t salt.
(3) 1t cumin seeds, 1/2t fennel seeds, 2 dried red chili peppers.

Preparation :

1. Rinse monkfish fillets; Pat dry; Cut into large cubes; Marinate in seasoning (1) for 40 minutes; Add seasoning (2) and mix well; Cover with cling film; Leave it for other 30 minutes.
2. Peel, rinse and mince garlic.
3. Peel, rinse and chop an onion.
4. Rinse, trim and cut okra into sections.
5. Peel and chop tomatoes.
6. Heat a dry heavy-based pan over a high heat; Turn to a low heat; Add seasoning (3); Stir-fry over a low heat for 4 minutes; Turn off the heat; Transfer to a blender and blend for coarse powder.
7. Heat a frying pan over a high heat; Add 1T oil and heat over a high heat; Pan-fry the monkish cubes from the step 1 over a high heat till golden brown; Remove and drain.
8. Add the remaining oil to the pan; Heat over a high heat; Turn to a low heat; Stir-fry the garlic and the onion over a low heat for 5 minutes; Add the coarse powder from the step 6 and 1/4t salt; Stir-fry over a low heat for 3 minutes; Add the tomatoes; Stir-fry over a low heat briefly; Add 2/3 cup of stock; Simmer over a low heat for 5 minutes; Add the okra; Cook over a low heat for 7 minutes; Return the fish to the pan; Add 1t garam masala; Cover the pan with a lid; Simmer over a low heat for 6 minutes; Ready to serve.
