Sweet And Sour Fish

Ingredients :

2 fishes, 4 cloves of garlic, 18g ginger, 3 shallots, 225g cherry tomatoes, 4t corn starch, 2/3 cup of vegetable oil, some coriander, some spring onions.

SEASONINGS:
(1) 2T lemon juice, some salt, some ground black pepper.
(2) 2T red wine vinegar, 2T granulated sugar, 2T ketchup.
(3) 1t corn starch, 3T water.

Preparation :

1. Scale fishes; Discard the gill and innards; Cut off the heads; Rinse the black membrane thoroughly; Rinse in running water; Pat dry; Make 3 diagonal gashes on each side; Marinate in seasoning (1) for 45 minutes; Evenly coat both sides of fishes with the corn flour.
2. Peel, rinse and mince ginger.
3. Peel, rinse and mince garlic.
4. Peel, rinse and mince shallots.
5. Rinse coriander; Cut off the most of the stems of the coriander.
6. Rinse and julienne spring onion.
7. Rinse cherry tomatoes.
8. Heat a pan over a high heat; Add 1/2 cups of oil; Heat over a high heat; Turn to a low heat; Pan-fry the fishes over a low heat till both sides have been golden brown; Remove; Pat dry with kitchen paper.
9. Add seasoning (3) to a bowl and mix well.
10. Set the oil aside, leaving 2T oil in the pan; Heat over a high heat; Turn to a low heat; Add the ginger, the garlic and the shallot; Stir-fry over a low heat till golden brown; Add the cherry tomatoes; Cook over a medium heat till they burst open; Stir in seasoning (2); Cook over a low heat for 2 minutes; Add the seasoning (3); Mix well; Cook over a low heat till the sauce has thickened; Turn off the heat.
11. Arrange the fishes from the step 8 on a serving plate; Pour the sauce from the step 10 over the fishes; Garnish with the spring onion and coriander. Ready to serve.
