Tandoori Baked Fish

Ingredients :

1 kg snapper, 4 lemons, 3 cloves of garlic, 19g ginger, 2T ghee, 1 onion, some coriander.

SEASONINGS:
(1) 1t salt.
(2) 185ml yogurt, 1t chili powder, 1t coriander powder, 1t garam masala, 2T channa flour, 1/2t ajwain seeds, 1t salt.

Preparation :

1. Cut 2 lemons into halves; Juice.
2. Scale snapper; Discard the gills and innards; Rinse the black membrane thoroughly; Rinse the whole snapper in running water; Pat dry; Cut deep and angled slits into both sides of the snapper with a sharp knife; Rub the seasoning (1) and the lemon juice from the step 1 into the slits; Leave it for 20 minutes.
3. Peel, rinse and mince garlic.
4. Peel, rinse and mince ginger.
5. Add seasoning (2), the minced garlic and ginger in a wide ghee-greased baking dish; Mix well; Arrange the snapper into the baking dish; Mix well; Chill in the fridge for 180 minutes (turn it over few times).
6. Preheat the oven to 200 degree celsius.
7. Peel, risne and cut an onion into rings.
8. Rinse and 2 lemons into wedges.
9. Put the baking dish into the oven above a roasting pan; Bake till brown and cooked (about 25 minutes); Remove; Arrange on a serving plate; Garnish with onion rings, lemon wedges and some coriander; Ready to serve.
