Vinegar Fish

Ingredients :

3 frozen mackerel fillet, 4 red chili peppers, 1 red onion, 3 cloves of garlic, 12g ginger, 2T coconut oil, 1 onion, 1 cup of oil.

(1) some lemon juice, some salt.
(2) 8 almonds, 1t turmeric powder, 1T coconut oil.
(3) 3T wine vinegar, 2/3 cup of stock.

Preparation :

1. Thaw frozen mackerel fillet; Rinse in running water for 5 minutes; Pat dry; Marinate in seasoning (1) for 45 minutes.
2. Peel, rinse and mince ginger.
3. Peel, rinse and mince garlic.
4. Rinse , seed and chop red chili peppers finely.
5. Peel, rinse and quarter a red onion.
6. Peel, rinse and slice an onion.
7. Add 1 cup of oil to a deep pan; Bring to the boil over a high heat; Deep-fry the sliced onion over a high heat till crispy and golden brown; Remove and drain; Turn off the heat.
8. Add seasoning (2) the ginger, the garlic, the red onion and most of the red chili peppers to a food processor; Process to form paste.
9. Heat a pan over a high heat; Add 2T coconut oil; Heat over a medium heat; Add the paste from the step 8; Cook over a low heat for 2 minutes; Stir in seasoning (3); Bring to the boil over a medium heat; Turn to a low heat; Add the fillet from the step 1; Cook over a low heat for 8 minutes; Remove the fillet to a serving dish; Bring the sauce in the pan to the boil over a high heat; Cook over a low heat for 1 minute; Turn off the heat; Pour over the fillet; Garnish with the deep-fried onions and the remaining red chili pepper.
