Balti Bhoona Lamb

Ingredients :

300g lean spring lamb, 3 onions, 3 cloves of garlic, 40g ginger, 1T oil, 1T lemon juice, 1 stalk of coriander, 30g mint leaves, 1 red chili pepper.

(1) some lemon juice, some salt, some ground black pepper.
(2) 1t salt, 1/4t ground turmeric, 1T tomato puree.
(3) 1 cup of water, 1.5 cups of stock.

Preparation :

1. Rinse lean lamb; Discard the bones; Trim off the fat; Cube; Marinate in seasoning (1) for 45 minutes.
2. Peel and rinse ginger; Shred most; Mince the remaining.
3. Peel, rinse and mince garlic.
4. Peel, rinse and dice onions finely.
5. Rinse and chop coriander finely.
6. Rinse and chop mint leaves finely.
7. Rinse, seed and slice a red chili pepper.
8. Add seasoning (2), the garlic and the minced ginger to a mixing bowl; Mix well.
9. Heat a heavy-based pan over a high heat; Add 1T oil and heat over a high heat; Stir-fry the onions over a low heat till soft; Add the seasoning (2) mixture; Stir-fry over a low heat briefly; Add the lamb; Stir-fry over a low heat for 3 minutes; Add seasoning (3); Bring to the boil over a high heat; Turn to a low heat; Cover; Cook over a low heat for 20 minutes; Scrape the bottom of the pan each time in the centre for 7 minutes; Add 1T lemon juice; Add the ginger shreds, the coriander, the mint leaves and the red chili pepper; Stir-fry over a high heat to mix; Ready to serve.
