Balti Mini Lamb Kebabs With Baby Onions

Ingredients :

460g lean minced lamb, 1 onion (medium), 3 cloves of garlic, 6 green chili peppers, 60g coriander, 12 baby onions, 12 cherry tomatoes, 4T corn oil.

SEASONINGS:
1T all-purpose flour, 1t garam masala, 1t salt.

Preparation :

1. Peel, rinse and chop a medium onion.
2. Rinse and chop coriander.
3. Peel, rinse and mince garlic.
4. Rinse and seed green chili peppers; Slice most; Chop the remaining.
5. Rinse minced lamb; Add to a big mixing bowl; Add seasonings, the chopped onion, an half of the coriander and the chopped green chili peppers; Mix well with hands; Transfer to a food process; Process for 1 minute to make the mixture even finer in texture; Divide the mixture into small portions (each is about the size of a lime); Wrap each around a skewer to form sausage shape; Put 2 sausage-shapped mixture on each skewer; Baste the meat with 1T corn oil and broil for 15 minutes (Turning and basting occasionally); Remove.
6. Peel and rinse baby onions.
7. Rinse cherry tomatoes.
8. Heat a pan with 3T corn oil over a high heat; Turn to a low heat; Add the baby onions; As soon as the onion start darkening, add the sliced green chili peppers and the tomatoes; Slide the lamb patties from the skewers to the pan; Stir-fry over a medium heat for 3 minutes; Turn off the heat; Arrange on a serving plate; Garnish with the remaining coriander. Ready to serve.
