Courgettes With Lamb

Ingredients :

3 onions, 260g lean lamb steak, 2 courgettes, 1 stalk of coriander, 4 cloves of garlic, 26g ginger, 120ml plain low fat yoghurt, 1T oil.

SEASONINGS:
(1) 1T lemon juice, some ground pepper, some salt.
(2) 1t garam masala, 1t chili powder, 1t ground coriander seeds.

Preparation :

1. Thaw lamb steaks; Blanch in boiling water for 10 seconds; Remove and immediately rinse in running water; Drain; Trim off the fat; Cut into stripes; Marinate in seasoning (1) for 45 minutes.
2. Peel, rinse and chop onions.
3. Peel, rinse and mince ginger.
4. Peel, rinse and mince garlic.
5. Rinse and chop coriander finely.
6. Rinse and slice courgettes.
7. Heat a dry skillet over a high heat; Turn to a medium heat; Arrange the courgettes in the skillet; Pan-fry over a high heat till both sides have been slightly brown; Turn off the heat.
8. Add seasoning (2), the ginger and the garlic to a mixing bowl; Mix well; Gradually add 120ml plain low fat yoghurt; Whisk.
9. Heat a karachi over a high heat; Add 1T oil and heat over a high heat; Stir-fry the onions till golden brown; Add the lamb stripes from the step 1; Stir-fry over a high heat for 1 minute; Add the yoghurt mixture from the step 7; Stir-fry over a medium heat for 2 minutes; Cover with a lid; Cook over a low heat for 15 minutes; Add the courgettes from the step 7; Toss over a high heat briefly; Turn off the heat; Arrange on a serving plate; Garnish with the coriander; Ready to serve.
