1 Soak 1/2 cup of yellow split peas in water for 3 hours; Remove; Discard the stones if any; Rinse; Drain; Arrange to a pan; Pour water into the pan (just enough to cover the peas); Bring to the boil.

Curried Lamb Chops

Ingredients :

8 lamb chops, 9 cloves of garlic, 16g ginger, 2 ripe tomatoes, 2 onions, 1T meat chili powder, 2t garam masala, 2 limes, 3 stalks of coriander, 1.5t cumin seeds, 500ml yogurt.

1T meat chili powder, 1.5t salt.

Preparation :

1. Peel, rinse and mince garlic.
2. Peel, rinse and mince ginger.
3. Peel, rinse and dice onions.
4. Rinse tomatoes; Blanch in boiling water for 20 seconds; Remove and peel; Dice.
5. Add the minced garlic, the minced ginger, the diced tomatoes, the diced onions and seasoning (1) to a big bowl; Mix well.
6. Rinse lamb chops; Trim off the fat; Blanch in boiling water for 20 seconds; Remove and rinse in running water for 30 seconds; Drain; Marinate in tthe mixture from the step 5 for 60 minutes.
7. Cut limes into halves;
8. Discard the stems of coriander; Rinse and drain; Chop.
9. Heat a dry skillet over a high heat; Turn to a low heat; Stir-fry 1.5t cumin seeds over a low heat till fragrant; Turn off the heat; Cool; Grind.
10. Add 500ml yogurt to a large saucepan; Bring to the boil over a medium heat; Turn to a low heat; Add the lamb chops together with the mixture; Cover with a lid; Cook over a low heat till the lamb is tender; Remove the lid; Add the ground cumin, 2t garam masala, lime juice and chopped coriander; Cook over a low heat till the sauce has thickened; Ready to serve.
