Gosht Keema Mutter

Ingredients :

2000g minced mutton, 300g peas, 330g onion, 330g tomato, 56g ginger, 56g garlic, 50ml oil, 50g cashew nuts, 23g coriander leaves, 3 green chili peppers, some mint leaves.

SEASONINGS:
(1) 1t curry , 1t chili , some salt.
(2) 5 bay leaves, 5 6-cm-long cinnamon sticks.
(3) 23g chili powder, 20g cumin seed powder, 10g turmeric powder, 10g meat masala powder.
(4) some salt, some garam masala.

Preparation :

1. Peel, rinse and mince garlic.
2. Peel and rinse ginger; Mince most; Julienne the remaining.
3. Rinse minced mutton; Marinate in seasoning (1) for 30 minutes.
4. Peel, rinse and chop onion finely.
5. Rinse peas; Blanch in boiling water with some salt for 20 seconds; Remove and drain.
6. Discard the stems of coriander; Rinse.
7. Rinse, seed and slice green chili peppers.
8. Slice 50g cashew nuts; Heat a dry skillet over a high heat; Add the cashew nuts; Stir-fry over a medium heat till crispy; Turn off the heat; Remove.
9. Rinse and cut tomatoes into pieces.
10. Heat a skillet over a high heat; Add 50ml oil and heat over a medium heat; Add seasoning (2); Stir-fry over a low heat till fragrant; Add the onions; Stir-fry over a low heat till golden brown; Add the ginger and the garlic; Stir-fry over a low heat till fragrant; Add the tomatoes; Stir-fry over a low heat for 5 minutes; Add seasoning (3); Stir-fry over a low heat for 2 minutes; Add the minced mutton from the step 3; Stir-fry over a medium heat for 5 minutes; Turn to a low heat; Stir-fry over a low heat till tender; Add seasoning (4); Stir-fry over a low heat till mixed; Add the peas from the step 5 and the green chili peppers; Stir-fry over a medium heat for 2 minutes; Add the cashew nuts from the step 8; Toss till mixed; Turn off the heat; Discard the cinnamon sticks and the bay leaves; Arrange on a serving plate; Garnish with the coriander and the mint leaves; Ready to serve.
