Indian Lamb Burgers

Ingredients :

50g chickpeas, 3 onions, 280g lean lamb, 5 green chili peppers, 18g ginger, 1 stalk of coriander, some mint leaves, 2 lemons, 1T gram four, 2 eggs, 240ml oil.

SEASONINGS:
(1) some salt, 1T lemon juice.
(2) 1t cumin seeds, 1t garam masala, 175ml stock,

Preparation :

1. Soak chickpeas in water overnight; Remove and rinse; Blanch in boiling water for 60 minutes; Drain.
2. Thaw lean lamb; Blanch in boiling water for 20 seconds; Remove and immediately rinse in running water till cool; Drain; Discard the skin and bone; Cut into pieces; Marinate in seasoning (1) for 30 minutes.
3. Peel, rinse and chop onions finely.
4. Peel, rinse and mince ginger.
5. Rinse, seed and chop green chili peppers.
6. Heat a pan over a high heat; Add 1T oil and heat over a medium heat; Add seasoning (2), the chickpeas, the onion, the lamb, the green chili peppers and the ginger; Bring to the boil over a high heat; Cover with a lid; Simmer over a low heat till the meat and the chickpeas are cooked; Remove the lid; Cook over a low heat till the liquid has evaporated; Turn off the heat; Cool.
7. Transfer the mixture from the step 6 to a food processor; Grind to paste.
8. Rinse and chop coriander finely.
9. Rinse and chop mint leaves finely.
10. Rinse lemons; Cut into halves; Juice 2 halves.
11. Scrape the mixture from the step 7 into a mixing bowl; Add 1T gram flour, the lemon juice from the step 10, the coriander and the mint leaves; Knead well; Divide into 12 equal portions; Roll each into a ball and then flatten slightly; Keep in the fridge for 60 minutes.
12. Beat eggs.
13. Dip the flattened mixture from the step 11 into the egg solution.
14. Add the remaining oil to a karahi; Bring to teh boil over a high heat; Deep-fry the mixture from the step 13 over a high heat till golden brown; Remove and drain to be burgers; Turn off the heat.
15. Arrange the burgers on a serving plate; Serve with a lemon half.
