1 Rinse ground lamb; Marinate in seasoning (1) for 30 minutes 2 Rinse, seed and chop a green chili pepper.


Lamb Meatballs

Ingredients :

700g lamb, 1 green chili pepper, 4 cloves of garlic, 23g ginger, 480g tomatoes, 1 onion, 3 stalks of coriander, 1T oil, 1 bowls of pilau rice.

SEASONINGS:
(1) some salt, some ground black pepper, 1T lemon juice.
(2) 1/4t garam masala, 1/4t salt.
(3) 1/4t mustard seeds, 1/2t cumin seeds.
(4) 1t cumin, 1t ground seeds, 1/2t salt, 1/2t chili powder, 1T ketchup.

Preparation :

1. Rinse ground lamb; Marinate in seasoning (1) for 30 minutes.
2. Rinse, seed and chop a green chili pepper.
3. Peel, rinse and mince garlic.
4. Peel, rinse and mince ginger.
5. Peel, rinse and chop an onion.
6. Rinse coriander; Chop most finely; Discard the stems of the remaining.
7. Rinse and chop tomatoes.
8. Add seasoning (2), the ground lamb, the green chili peppers, an half of the garlic, an half of the ginger and most of the chopped coriander to an electronic blender; Blend till the mixture binds together; Divide into 18 equal portions; Shape each into a ball; Chill for 10 minutes.
9. Heat a heavy-based pan over a high heat; Add 1T oil and heat over a medium heat; Add seasoning (3); Stir-fry over a medium heat till spluttered; Add the onion, the remaining garlic and ginger; Stir-fry over a low heat for 5 minutes; Add seasoning (4); Stir-fry over a low heat briefly; Add the tomatoes; Stir-fry over a low heat briefly; Add the remaining chopped coriander; Stir-fry over a low heat till mixed; Simmer over a low heat for 5 minutes; Add the meatballs; Bring to the boil over a high heat; Cover with a lid; Simmer over a low heat till the meatballs are cooked; Turn off the heat; Arrange on a serving plate on the top of the pilau rice; Garnish with the remaining coriander; Ready to serve.
