Lamb With Spinach

Ingredients :

700g lean lamb, 400g spinach, 1 red bell pepper, 3 green chili peppers, 1 stalk of coriander, 1T lemon juice, 2 onions, 18g ginger, 4 cloves of garlic, 6.1T corn oil, some salt.

SEASONINGS:
(1) 1T lemon juice, some ground pepper.
(2) 1.25t chili powder, 1t salt, 1t garam masala.
(3) 2 cups of stock, 1.75 cups of water.

Preparation :

1. Rinse lamb; Trim off the fat; Cut into cubes; Marinate in seasoning (1) for 30 minutes.
2. Peel, rinse and mince ginger.
3. Peel, rinse and mince garlic.
4. Peel, rinse and slice onions.
5. Rinse, seed and cut a red bell pepper into pieces.
6. Rinse, seed and chop green chili peppers.
7. Rinse and chop coriander.
8. Rinse spinach; Soak in water with some salt for 15 minutes; Remove and rinse; Drain; Blanch in boiling water with some some oil and some salt for 1 minute; Remove and drain.
9. Add seasoning (2), the ginger and the garlic to a mixing bowl; Mix well.
10. Heat a heavy-based pan over a high heat; Add 6T corn oil over a high heat; Stir-fry the onions over a low heat till well browned; Add the lamb cubes from the step 1; Stir-fry over a high heat for 2 minutes; Add the spice mixture from the step 9; Stir-fry over a low heat till the lamb are evenly coated; Add seasoning (3); Bring to the boil over a high heat; Cover the pan with a lid; Cook over a low heat for 35 minutes; Add the spinach; Stir-fry over a medium heat for 10 minutes; Add the red bell pepper, the green chili peppers and the coriander; Stir-fry over a medium heat for 2 minutes; Sprinkle with the lemon juice; Ready to serve.
