Spring Lamb Chops

Ingredients :

8 small lean spring lamb chops, 2 red chili peppers, 2 stalks of coriander, 6 cloves of garlic, 23g ginger, 2t , 175ml yoghurt, some cherry tomatoes, some lettuce, some cucumber, 18g mint leaves.

SEASONINGS:
(1) 1T lemon juice, some ground pepper, some salt.
(2) 1t salt, 1t soft brown sugar, 1t garam masala.
(3) some olive oil, some ground black pepper.

Preparation :

1. Thaw lamb chops; Blanch in boiling water for 10 seconds; Remove and immediately rinse in running water till cool; Drain; Trim off the fat; Marinate in seasoning (1) for 30 minutes.
2. Peel, rinse and mince ginger.
3. Peel, rinse and mince garlic.
4. Rinse and chop coriander finely.
5. Rinse, seed and chop red chili peppers finely.
6. Rinse and chop mint leaves finely.
7. Add seasoning (2), the mint leaves, the red chili peppers, the garlic, the ginger and the coriander to big bowl; Mix well; Gradually add 175ml plain yoghurt; Mix well with a small whisk.
8. Rub the lamb chops from the step 1 with the mixture from the step 6 so that the lamb chops are evenly coated with a layer of the mixture; Cover; Keep in the fridge overnight.
9. Rinse and tear lettuce into pieces.
10. Rinse and cut cherry tomatoes into halves.
11. Peel, rinse and dice a cucumber.
12. Add seasoning (3), the tomatoes, the lettuce and the cucumber to a mixing bowl; Mix well; Transfer to a serving plate.
13. Heat a heavy-based pan over a high high heat; Add 2t oil and heat over a medium heat; Arrange the lamb chops from the step 8 in the pan; Cook over a medium heat till cooked (about 20 minutes); Turn off the heat; Arrange on the serving plate; Ready to serve.
